The place
A former workshop with a single long wall. We gave it one gesture: a nine-metre counter.

Opening from zero: concept, space, team, suppliers and systems in fourteen weeks.
The approach
Concept and operation were designed together, so that the bar stations dictated the drawings, not the other way around.
The operation
Mise en place by station, prep lists linked to forecasts, and a back bar organised by speed of service.
